One pan Spanish beef & rice

Spanish beef and rice

This dish uses only 450 grams of beef mince to feed 6 people, and like most one pan dishes it’s easy to prepare.

How to make:

In a large frying pan add the mince and cook, pressing with a potato masher until crumbled. Add the onion, garlic and celery if using, and cook gently till soft. Add the cumin and Mexican seasoning and mix well. Stir in the rice, salt, tomatoes and stock and then add the vegetables. Bring the mixture to a simmer, mix well and cover – place a baking sheet over the frying pan if yours doesn’t have a lid. Reduce the heat to low and cook without stirring for 25 minutes. Remove the cover and give it a stir before serving.

What you will need:

  • 450 grams lean beef mince
  • ½ onion chopped
  • 2 cloves garlic crushed
  • 1 tsp cumin
  • 2 tsp Mexican seasoning or Taco seasoning
  • 3-4 cups chopped vegetables. Use frozen vegetables or combine fresh and frozen - a stalk of celery small pieces combined with a frozen stir fry blend works well in this.
  • 2 cans chopped tomatoes
  • 1½ cups basmati rice
  • 1½ cups beef stock
  • ½ tsp salt
