Beef and vegetable pasta bake

This pasta bake makes 300 grams of beef mince into a hearty family meal. It’s easy to make and will be a favourite with all the family.

How to make

Brown the mince in a frying pan. Add the chopped onion, garlic and sliced seasonal vegetables and continue cooking until the vegetables are soft. Pour in the tinned tomatoes, tomato paste, herbs, stock powder, sugar and Worcestershire sauce and simmer for 10-15 minutes. While the sauce is simmering cook the pasta in boiling salted water according to the packet directions and assemble the cheese sauce.

To make the cheese sauce, melt the butter in a saucepan, turn the heat to low and stir in the flour. Mix well and then using a whisk gradually add the milk, a little at a time, stirring continuously to create a smooth lump free sauce. When all the milk is added swap the whisk for a wooden spoon and stir the sauce continuously until it begins to thicken. Do not allow it to boil. When the sauce coats the back of a spoon, stir in the grated cheese, mix well, season with salt and pepper and set aside.

Drain the pasta and stir into the meat sauce, pour into a heat proof dish, smooth over the top and spoon over the sauce. Grill or bake until piping hot and golden on top.

What you will need

300 grams lean beef mince
1 onion chopped
2 cloves garlic chopped
2 cups sliced vegetables
2 x 400 gram cans of chopped tomatoes
1 tsp dried mixed herbs
½ tsp dried oregano
½ tbsp Worcestershire sauce
¹/³ cup tomato paste
2 tsp beef stock powder
2 tsp sugar
200 grams (2 heaped cups) dried pasta - shells, penne or macaroni
Salt and pepper

For the cheese sauce:
1 tbsp butter or oil
1 ½ tbsp plain flour
1 cup milk
½ cup grated cheese
Salt and pepper
